צור שלו השלים את התואר השלישי באוניברסיטת פרינסטון (היסטוריה, 2004). לאחר השתלמות פוסט-דוקטורט באוניברסיטת אוקספורד הצטרף לפקולטה למדעי הרוח באוניברסיטת חיפה, שם הוא מלמד היסטוריה אירופית של העת החדשה המוקדמת. הוא עוסק בהיסטוריה תרבותית ואינטלקטואלית ומתמקד במחשבה גיאוגרפית, דתית ובקשרים שביניהן. תחום עניין נוסף הוא הבראיזם ואוריינטליזם בתקופה. פרוייקטים בפיתוח – תרגומים והתקבלות טקסטים גיאוגרפיים עבריים מימי הביניים באירופה הנוצרית של העת החדשה המוקדמת ; מסורת המסעות המלומדים ללבאנט במאות ה-17 וה-18. באוניברסיטת חיפה הוא ניהל את סמינר "ימי הביניים והרנסנס" והקים את תוכנית ההוראה החדשנית "נופי ידע". מאז 2016 הוא עורך ראשי (שותף) של כתב העת Mediterranean Historical Review . הוא מייסד (שותף) ומנהל לשעבר של מרכז חיפה להיסטוריה של הים התיכון (HCMH).
